YUMMMM-YYYYY!!!!!

This weekend, honeykins and I attended our semi-monthly Neighborhood Diner’s get together.  It’s a group of 175 people, broken into groups of 16 or so, that meet every other month for a year to “break bread” and socialize.   It has been a great way to meet new people in the ‘hood over the years.  Every January, all 175 of us get together and party, then break off into pre-arranged groups of 16 people that we have not been grouped with before. The way the dinner works is this: each couple (or single) is host for one of the  evenings—a Saturday—and sets the menu and theme. She distributes recipes or lets members decide what they’d like to bring for that meal.  This weekend, I was in charge of dessert, and since my almost-famous fruit cobbler is such a hit, and it’s almost the end of summer, I made a giant mixed-berry cobbler. For those of you who like cobbler, and for those who don’t, try this at home. You’ll thank me for it!

Note: Most of my friends are ga-ga about my blackberry or mixed-berry version, (of which I buy the frozen bags at any grocery) but my parent’s home-grown cherries make a sweet-tart favorite.  Peaches work well, too.

Jules Almost-Famous Cobbler

3-4 cups fruit

1 C. sugar (or sugar/Spenda blend) mix together and refrigerate overnight.

Preheat oven to 350.  Melt 1 stick butter in 8 x 11 baking dish.  Mix together 1 C. flour, 1 ½ t. baking powder, 1 t. salt, ¾-1 C. sugar (or blend), 1 C. milk (I use soy milk). Pour batter over melted butter. Spoon fruit evenly over batter. Bake 45 minutes. Serve warm w/ ice cream.

  2. Ah yes….I too caught the faux pas. While I’m not of the “he” variety I fear you have indeed slighted the less fair sex. It’s OK. I’ll not mention it to my own honeykins, aka Boo Boo (since we’re spilling on the pet names here) and we’ll just carry on. Oh….the cobbler was indeed yummy!!!
