We’ve had houseguests visiting for the past 2 weeks (2 different couples, 1-week each), and i just love to cook up a a special meal for friends, as you know from past posts. So, since we’re renting a little house close to Granville Island , my friend Stephanie and I walked over and bought a bunch of fresh, organic, local food to cook up a great meal. On the menu was
a big-ole salad made with heirloom tomatoes, basil and mozzarela cheese (local), with a splash of balsamic vinegar and olive oil. The main dish, as you can see, is fresh mussels and clams, steamed on the grill with a thai broth -sopped up with chunks of sourdough bread, just out of the oven, and some local wine. Lots of wine.
Now, I think that was my favorite meal, except for the fresh lobster I had when they took us out to dinner at a great restaurant (Monks) on the water.

Here is a delicious salmon recipe. This is a great entree for company because you can make the pouches up in advance and take from the frig to oven when ready to bake. And it’s easy! And since you are in the Great Pacific Northwest, I’m sure you have some delicious, fresh salmon.
Salmon filets 5-6 oz each
Fresh or dried basil
Thai style chili sauce
Roma tomatoes – one per filet
White onion
Fresh cracked pepper to taste
On individual pieces of foil or parchment paper, palce a salmon filet skin side down. Brush top of each filet with 1 tsp. of chili sauce. Sprinkle with dried basil or place fresh basil leaves on top. Next cover with Roma tomato slices and onion slices. Pepper to taste. Fold foil or paqrchment to create loose pouches around all ingredients. Bake at 375 for 40 minutes.
